... first cook of the new year on the 78 mbh coppermist. 6.5 pound bone in shoulder destined for tacos. After 75 plus hour weeks in kitchen for the holidays it's nice to get a moment for a simple family cook.

Nah... when I cook at home I get to create without judgement of upper management or guests who like to change the dish. I cook out of pure respect for ingredients and technique and love. Food is therapeutic and a voice for me. I like to say I am a cook who has the title of chef, sadly that makes me much more of a babysitter at work and a lot less of an artist.

... I ran consistent with SNS and used coals at 225 until stalling at 163. Cleared the vents added about a quart container of unlit lump and brought to 325 cooked another couple hours till prove tender at 193. Rested and pulled a la kitchen aid...

Wow what an amazing looking cook! Thanks for the photos and sharing! I loved how you made the sauce (is that the right word? I'm not a chef haha). Pulling pork with a stand mixer? I love that idea! Which attachment did you use?
