Poortex/vortex drip pan

I use different sizes of poortex so often that my sns are now relegated to smoking and roti duties. A glaring drawback with a poortex/vortex setup  is the  lack of options for dealing with the drippings. Using aluminum foil  just doesn't  cut it for me. Noticed  that a convex comal might just do the trick so  I've  been monitoring the prices  on Amazon. Finally found one at a thrift shop the other day for $15. I just trimmed it with an angle grinder to fit inside the kettle.

That is pretty cool.  Just curious, if you'd left more of the center intact, could it have acted as the "Poortex" part, making it a one piece unit?

Probably not because the center part is only 2" high. Also you'll run the risk of flare ups in the drip pan when  cooking oily foods such as chicken thighs or pork belly with the coals being directly next to it.

Yeah it should keep the bowl very clean with only dry ashes. Would have been better if the diameter is 1/2" smaller. The bottom of the comal is 19 1/2" and the final rim size is 19 3/4". Had to cut  4 notches  where the straps are located for it to slide in.

That might be it. The one i got has a  19 1/2" bottom  and 21" at the rim. I was tracking  that item  for awhile  but the price never went down.

That’s really neat. Will you let the heat bake the drippings to clean it or do you plan on washing it each use?
