Almost Chicago pizza

Just the wife and I tonight and at the last minute I decided to try Chicago pizza. Started the dough after 6 last minute. I did one on a square pan on the grill and one in the cast iron skillet in the oven. I loosely looked at a couple recipes for Chicago style pizza. I had the oven set at 425 and pre cooked the crust in the skillet for 10 minutes. I had the 26” around 450 and did not pre cook the crust. Both pizzas cooked approximately 35 minutes. Much to my surprise, they didn’t resemble anything I had eaten in Chicago but were phenomenal none the less. Ironically the pizza in the grill had crunchier crust than the pre cooked in the cast iron. Both were great and I was utterly surprised both turned out so well and came out of the pan and skillet easily.  I used cooking spray on both before installing the dough. Also I used crushed tomatoes and pizza seasoning as a sauce. I preferred these to what I’ve made in the pizzaque.

Minced garlic added to the sauce and topped with Parmesan. Critical.

Thanks!  The pepperoni came from Kroger if you have one of those. It was sliced paper thin.

I intended it to be deep dish but it ended up average thickness.

That pit boys recipe has way too much meat for my taste. I like the sauce and cheese to be the star of the show.

Thanks!  I had to look up Detroit pizza and your right, these were very similar.  I’ll be making more of these for sure.

Pizza... Chicago.  Me.

Whelp, my daughter makes a deep dish pizza.  Fire up the grill as hot as it can get.  Gassers make it easier to get to the 550+ range.  You only cook for about 20 minutes.

I do CI pizza all the time, in fact I prefer it over doing a thin on the kettle pizza.  BBQ Pits one like most of their videos is over the top and ridiculous, I wouldn't even enjoy that pizza pot pie with that much meat.

I agree. I preferred the cast iron pizza and my square pan pizza to other pizza I have done. It’s kind of a pain making several small piazzas on the kettle.

It’s weird. My cheese and crust are turning out better in the oven at 425 versus the pq at much higher temps.
Granted, it takes a half hour as opposed to 5-7 minutes but I’m cooking larger pizzas and 2 at a time so it balances out. Much less work as well. Not as fun though.
