If you like Chinese food:  orange flavor beef dish

Suggestion on beef short ribs:
  *  add orange granuals to your dry rub (from Penzey' Spices)
  *  add orange marmalade onto BBQ sauce

Yours look awesome by the way.

Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...

Nice cook Abett, they look wonderful.  Never done the beef ribs, gonna have to give it a go one of these days.

Thank you to all for the kind words. I was always a St. Louis pork ribs cook and I am really glad I finally tried beef ribs. Low and slow worked. I cooked the smaller rack for 7 hours and the larger one for 8.5 hours.
