Smoked chuck verde enchiladas with the slow n sear and weber briquettes. Kettle held at 245° for the 5 hour cook, chuck was rested for 45 minutes and shred. Once assembled back on the grill, vent's were  adjusted from having two daisy wheels closed fully and one a quarter open to two fully open. Temp raised to 345 and enchiladas cooked covered for 45 minutes covered and 15 uncovered.

Verde
1.5 tomatillo
2 yellow onion sliced into 3/4 in thick rings
3 poblanos
2 oranges halfed (rest on indirect side while charing tomatillo, onion and poblano
Char ingredients on direct heat till tender  put all ingredients with juice of oranges in blender and puree with one bunch cilantro 8 clove garlic season to taste
Char 3 ears of corn direct with other veg removed kernels and set aside

2.5 pound chuck(room temp]
Heavy salt and pepper
Smoked at 245° till probe tender (I pulled at 205° at 5 hours probe slid in and out like butter)
Rested in towles for 45 minutes
 Shred chuck mix with corn, two cup mixed shredded cheese and half of the verde to combine. Coat baking pan with verde roll mix in  tortillas  and fill pan coat with remaining verde and top with more cheese . Back on  kettle at 345° for 45 minutes covered and 15 uncovered allow to rest for 10 to 15 minutes prior to slicing.
Crema is 3 roasted poblano 4 cloive roasted garlic 1 avocado zest of 2 limes half bunch of cilantro pureed and folded into cup and a half of sour cream season to taste

Very nicely done. Looks incredible. Those flavor combinations sound like they would be interesting and work well together.
