Thank you. Been smoking now at about 225-240 for nearly 3 hrs. Can't wait to dive in.
Trying some apple wood chunks for the first time.
Also a dry rub for the first time, Meathead's Memphis Dust.

I'm smoking ribs for the first time tomorrow.  So torn on the method. Think I will indirect around 225 for 4 hours, wrap for an hour and then see what I have. Going to try Butt Rub on them. Anyone else tried butt rub on ribs?  Trying the snake method for first time too.

No paper....the foil keeps the heat from burning the rack closet to the coals. I do something very similar.

The foil is just blocking the heat on that other rack using the SnS. No paper.
They came out amazing.
