1st hour check. The breast is at 135! Thanks to my fellow Floridian @MR.CPHo for spotting out that I did not remove the plastic leg truss! Oops...

Eh... I have been cooking on charcoal and webers for 30 years or so. It's exciting to do something different, I feel like a complete noob today! The breast is way hot! 185. The thighs are at 175… hopefully it is not dry (trust the brine Tim), that is what gravy is for :-)

Well I will sure take a plate! It looks terrific.
I have my best luck cooking whole turkeys in the basement (in a pan on the coal grate), or spatchcocked on my 26er.
