What is your #1 go-to appetizer recipe??

Hey all,

Now that spring is here and grilling weather is upon us I was curious as to what everyone's staple appy's are to satisfy a hungry crowd? Please include the recipe if at all possible!

A few of my fav's are:



Bacon wrapped pineapple: Insanely easy - simply chop slices of bacon in half and use it to wrap pineapple chunks. A little brown sugar sprinkled on there doesn't hurt either!



Prosciutto Wrapped Asparagus: @Troy introduced me to these evil little creations! Take 2 or 3 pieces of asparagus and wrap in provolone cheese and then again in the prosciutto to hold it all together. Season if desired. These are unbelievably good!

Shit, those bacon wrapped pineapple chunks are amazing too. This is the kind of kick in the ass I need. I've apparently "forgotten" about side dishes.
All of my recent grilled meals have been... lonely.

Wife said "No more GRILLS in this house!" So I bought a 2nd house!

iCARRY

Turds-Cored, cream cheese with some rub mixed in, wrapped in bacon, 225 for 2.5 hours. Prefer hickory or apple wood.

Wings-Brined, dusted with whatever rub I have, Weber baskets in the center filled with KBB for about an hour. Prefer cherry wood.

Asian wings. Vac bagged with duck fat, SV'd @150ยบ for 4 hours, then onto the screaming hot kettle for the finale.

Sauce:

1 cup Hoisin sauce
1 cup Orange marmalade
4 tbs honey
1 tsp cayenne
2 tsp fresh ginger - finely minced
6 to 8 scallions - finely chopped
2 tbs sesame oil
a splash of Secret Aardvark hot sauce

Mix together, using a stick blender... make it look kinda like this...



Onto the grill:

Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Bacon Wrapped Sweet Peppers or Jalepenos with minced pepperoni mixed in w/ the cream cheese

I don't necessarily have a #1 go-to appetizer ...
For what I end up going with, I kinda base it on the crowd, and also ... what is easiest based on all of the other stuff I am doing.

Potato skins are very easy to do.  I highly recommend them.

Pitted figs stuffed with blue cheese/crushed pecan mixture, wrapped in bacon, grilled x 1 to 2 minutes then drizzled with a balsamic vinegar reduction

Thanks! This method is absolutely my favorite wing cook. Oh I forgot to mention, they are sprinkled with toasted sesame seeds.
