I saw these at the butcher.



Very pricey steak, but I knew that it would be just the wife and I for tonight, so I picked one up for us to split.

Here it is with mushrooms and bakers.



So I stirred the old charcoal in the SNSXL, added a compact chimney of lit Stubbs, and got the 26 up to about 225. Cooked the steak indirect until 115 - about 25 minutes. Then opened everything up to get hot and seared for a few minutes.

Then I waited...

The outcome.



Then much later that night.
