Another chuck roast

@sinisterdonut inspired me to try a chuck roast. I haven't done one on the grill. A customer of mine gave me a bag of pecan pellets. I like using chunks better but figured I'd give them a try today. Plus I've never used pecan. The wsm was belching brown smoke to start. I waited for that to quit before I put the meat on. When it's cold, I start the chimney surrounded by charcoal so it starts the chimney and the coal in the basket.





Another no water pan cook as well. At least for the first hour.

Yep. I've got plenty of beer for today's cook. [emoji56]

Smoked for an hour. Then placed in a foil pan with veggies, beef broth, soy, worshy, franks, onion soup mix and salt and pepper.




Foil pan was too full and I dropped liquid onto the hot lid in the ground. Made a mess of the wsm lid immediately. I ended up placing the foil pan inside another solid metal baking pan. I'll probably skip the foil pan and put all the contents in a real pan to start with next time.

Wow. My daughter said it was the best pot roast I've ever made and she's usually my toughest critic. That little bit of smoke at the beginning is the magic. It doesn't look like much but it is fantastic.
