The first one was a flop instead of a flap but I ate it anyways.
After I got the heat down everything went smooth and easy.
The recipe is "Clark Gable Pancakes" for the base recipe. Its a good simple recipe that dont require any whipped egg whites or special techniques but makes a good pancake with a nice rise, texture, & flavor, plus its adaptable without wrecking the rise.
I was forced to alter the recipe slightly because I was short on Baking Powder. Instead of using 2 Tb/cup of flour that Clark called for, I used 1 Tb/cup flour and substituted 1/4 ts. of Baking Soda/cup flour. The acid in the Huckleberrys will boost the leavening ability of the Baking Powder so the Soda is probably not necessary, but I wanted to make sure to get a really good rise (which ended up about 3/4' thick). The vanilla was not added either.
1 Cup Flour
1 Tb. Baking Powder
1/4 Ts. Baking Soda
1/4 Ts. Salt
1 Egg
1 Cup Milk
2 Tb. Oil
