@captjoe06 -  Looks awesome.  I love the teriyaki sauce you used...have been using it for years.  How does the tuna come out in the middle cooked this way.  I'm more of a rare tuna fan, but have had plenty of tuna cooked at the way through that was really damn good down in Cape Hatteras out on the beach fishing.

@mikeRocksTheRed This is cooked through.  Trick is to get it firm but not dried out.  My fishermen and I can't eat enough of it.   Luck for me they bring it in,  I smoke it and give them half back all smoked.  Works out great for everyone!
