Sliced potatoes in a CI skillet

I have made this side dish often. Just thinly sliced potatoes arranged in a 10 in CI skillet. Thinly sliced onion and garlic spread out evenly amongst the potatoes. Thyme, rosemary,salt, and pepper. Topped with a butter, and placed on the grill (indirect) at around 425 for 45 min or so. Added some grated cheddar/Parmesan and let it melt before taking it off the grill.

I'm used to just throwing thick sliced spuds right on the grate but I might have to give that a shot.

They look like an appetizer that everyone can just grab a few.  Wow I need to try to make those once and make sure they are ok before I make them for the family.  ;)

Jeff, they cook evenly from top to bottom, and the bottom of the potatoes are nice and tender from simmering in the butter/seasoning. I did stuff the pan a little full this time. The pan wasn't placed directly over the fire at any point. You can baste with the butter in the pan or hit the tops if the potatoes with a little olive oil spritz midway.  Indirect at 425 (dome temp) for about 45-50 min or so. I didn't take a pic but I threw a 2lb slab of Chilean bass over the fire to complete the meal.

Using cast iron ensures even cooking - even those potatoes in the middle were nice and tender. I think my 6 year old son ate more than me. I really like to cook side dishes with CI on the grill. I have  three 12 inch and one 15 in skillet (used a 10 in skillet for the potatoes). I also have several CI Dutch ovens. My wife complains that I have bought more kitchen utensils over the years than she has.

My kids love potatoes done in the skillet.  Never thought to do that way.  This will be put in the must do pile for sure.  Thanks for the tip!
