First time doing ribs on the performer

I usually use my WSM for ribs and usually with the water pan full. Just for kicks, I decided to try them on the performer. Set up a basket mostly full of unlit KBB and a few mesquite chunks, then poured on abt 10 lit coals.  Had to add some more fuel at the 4 hour mark, total time was 5.5 hours. I didn't wrap in foil either.  Final results were very good, nice flavor, good bite. Not as tender as the ones I've foiled, but I purposely wasn't going for ones where the bones just completely fall out.







Plated up with collard greens, cole slaw, roasted potatoes, and sautéed mushrooms and onions.

It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch
