Late night sous vide and sear

Ok...I like my steaks on the rare side of medium rare...

Sous vide for 3.5 hours @ 128

Hard sear over a full chimney in the Smokey Joe



Add some boiled shrimp, and it's the perfect late night protein meal.

Doesn't get any better than that.  Does a smokey joe really hold a full chimney of coals?  I've never tried that.

Exactly one chimney, with about 1/4-1/2" grate clearance. Perfect for searing. A little wasteful for the coals, but I snuff them out and reuse them.

 ;D That is the way I love mine to! My wife medium well, son medium, Me I would like to think if I had a good first aid kit I could get it up and walking soon!

I don't preseason my steaks before sealing, but I do put considerable kosher salt and fresh ground pepper before searing. I don't want the salt to start to "cure" the meat, so I season after removing and drying the meat...the let rest for 30-40 minutes to reclaim the moisture the salt brings out. Then I sear high heat until I get the crust I desire; sometimes in a cast iron, sometimes on the grill.
