Broke in the new rotisserie
« on: December 27, 2015, 03:25:51 PM »
Got the rotisserie for Christmas and had to break it in. Made a 2 1/2 lb. eye of round. I injected it with beef broth and put rub on and wrapped it in seran wrap and let it sit over night. I took it out an hour ahead of putting it on and rubbed it with alittle more rub. Got the kettle running 300 (I didn't realize that the rotesserie would cut the temperature by so much normally this amount of charcoal id be running 350-375). I put one chunk of oak on. I pulled it at a IT of 126 and let it rest for 15mins. It was killer.

The rotisserie is definitely my favorite accessory, thus far. Cornish hens, Prime Rib roast, wings in a basket, chickens...all have been perfectly amazing.
