Rib Night!
« on: December 15, 2015, 10:26:06 PM »
Fired up some ribs in the 14.5 WSM and kettle at the firehouse tonight. We had beef, st. louis, and baby backs, along with jalapeņo green chile corn bread, bacon baked beans, red pepper and onion green beans. I think it was enough to feed 7 of us.

I used apple and guava wood chunks for 5 and a half hours total at 225-250 most of the time.

I wrapped everything up at about 3 and a half hours in pink butcher paper, because that's what aaron franklin uses. actually so it won't dry out.

The crew took care of the sides...

The final product

My plate.

Hope you enjoyed, we did.

Good looking spread of food - the guys at the firehouse must want you to cook every day. Did someone finish that crossword?

Thanks guys! I like to cook, so it's a win win situation on my crew...😄.

Yes that crossword did get finished eventually.

That all looks fantastic!
I bring my WSM to the fire station occasionally,  the crew loves when pork shoulder goes on sale.
