Chicken Soup On The Grill **Updated***

Started making this about 7 years ago. I normally make about 16qts of this this time only 8+qts. I love it a my neighbors love it to.

Now this is normally made in my "Dutch Ovens" but this time did it in my restaurant pot. The recipe that will follow is the "Dutch Oven" Recipe. I did not photo all pictures of this procedure but you will get it I know you will  ;).

Nothing changed but the device used to cook in. (Dutch Over = Restaurant Pot)



















Dan's Grilled Dutch Oven Chicken Soup

7oz Carrot Grilled - Cut after being grilled
7oz Celery Grilled - Cut after being grilled
2 Medium Onions (Diced Fine) *** NOT GRILLED
1 TBSP Parsley
1 TBSP Oregano
½ TBSP Sea Salt
½ TBSP Fresh Ground Pepper
4 TBSP "Weber" (Zesty Lemon Seasoning)
4 TBSP Extra Virgin Olive Oil
4 Cups Of Water
5 Tsp Chicken Base or 5 Cubes
3 LBS Canned Chicken Broth or better "HOME MADE"  ;D
3 ½ LBS Boneless Chicken Thighs "The BEST for soup I believe" Grilled - Cut after being grilled

•   Boil 4 Cups of water and add 5 Tsp Chicken base (Let Cool) if using chicken Base
•   Put ½ TBSP Sea Salt,  ½ TBSP Fresh Ground Pepper, 1 TBSP Parsley, 1 TBSP Oregano, 1 ½ TBSP "Weber" (Zesty Lemon Seasoning) , and 2 Medium Onions (Diced Fine) NOT GRILLED into crock pot or Dutch Oven.
•   1 TBSP  Virgin Olive Oil, and ½ TBSP "Weber" (Zesty Lemon Seasoning). Mix together and add Celery and Carrots. Let sit 5+ min. Put on Grill until somewhat soft, let cool and then cube.
•   3 TBSP Extra Virgin Olive Oil, 2 TBSP "Weber" (Zesty Lemon Seasoning). Put the chicken into the mix and let sit for 30 min.
•   Cook chicken on grill until done
•   Put Dutch oven on grill with the broth *Note If using a (Dutch Oven Put Broth Into Dutch Oven Before Placing On The Grill Or You May Crack Your Dutch Oven >:(), Celery, and Carrots, and let cook for 1 to 1.5 hours. (Do Not Put Chicken Into Pot)
•   After about 1.5 hours put cooked chicken into pot and stir in ½ TBSP of the "Weber" (Zesty Lemon Seasoning)
•    Let cook for another 15min  to 1/2 hour or so.
•   Add uncooked noodles 3 to 4 to 5 cups you be the JUDGE and let sit about 15min until noodles are cooked.

Now I find this is best served with fresh Bread and an Ice Cold Beer!

Very creative cook - thanks for sharing the recipe!  I love the thought of roasted veggies instead of raw.


If you were going to make a big batch, and freeze some of it, would you leave out the noodles and instead add them when you were reheating the soup?

@Winz yes when I do the big batch I leave out the noodles and then add them later. Otherwise they break down.
What I also try to do is keep one batch roof just the broth and freeze it without the chicken or veggie.I just strain out that stuff and freeze it I then use that as a starter for the next batch. It has a lot of flavor. :)

Nice looking recipe. My mom's been baking soup for as long as I can remember. You're the only other person I've seen do it.

@effinUker  As you know grilling gives a whole new flavor to chicken soup!

What an awesome idea - I can only imagine the flavour the soup picks up! I bet experimenting with different smoke woods would have a fairly noticeably taste difference. Thanks for sharing!

@SixZeroFour    yes it will most definitely pick up the flavors of different woods be careful not to use sweetwood. I use Hickory or mesquite myself

That makes complete sense, cheers for mentioning Sss. I tend to lean on sweeter woods more than the mesquite or hickory but with a soup they would be perfect (Sort of like that last shot of the soup in a bowl!)

Great post and thread - I will have to try this out for sure. I never thought of soup on the grill - chili of course - but never soup. This looks really good.
