Brisket newbie

I just had some today and it tasted like pot roast.  I bought it at a BBQ joint.  WTF?  I wouldn't want to pay that much, spend that much time smoking it for pot roast.

Grate vid Buckie, every time I watch one of his vids I have the need to buy a roll of red butchers paper..
Gettinit, did you try asking the bbq joint folks how they cook their products? If they are trying to get
a lot of product done is a hurry they might be foiling the meat to expedite the process.

Could also be that they cut up an entire brisket and have the slices sitting in an au jus bath on a steam table.

There is a whole new set of videos with Aaron Franklin on pbs.org.  Just search BBQ and you will fine the complete video with brisket (Episode #1) and others as well.  You will not be disappointed.
