Huckleberry Cheesecake on the MT

  Got some free time to head up to the mountains and pick some huckleberries , I had a bbq sauce in mind for some of them but my wife suggested a cheesecake so we went that route , with a quick and easy camp version you make in a skillet . 


Rubbed up a nice pork roast with some Sucklebusters And got that going on the 22 "



In the mean time I softened two packs of cream cheese and lined a cast iron skillet with parchment paper . I mixed 1 cup sugar with the cream cheese and gently folded in  1 cup of fresh Huckleberries.


I realized my roti motor was out on loan and so I busted out my D battery powered roti motor that goes with my Grizzly Spit camping set.


Next I lined the bottom of the skillet with pillsbury crescent roll dough carefully sealing the pieces together to form the bottom crust .

Add the filling and then the top crust , brush with butter and sprinkle with cinnamon and sugar .

Ready to pull the roast and get the cheesecake on the grill

 
To bake cover the skillet with loose foil forming a tent and cook at 350 or so on the grill for 30-45 minutes until done , check the dough with a tooth pick if necessary . Allow to cool and then refrigerate, slice and serve .

Man I miss fresh huckleberries.

You know, the great thing about cheesecake is that you can seal it, freeze it, and send it overnight to your buddies.....
