I wanted to try and do something with food cooked on the grill but not be the typical meal.  so i decided to make a hearty pasta salad.  i used thighs, grilled corn, diced pepper, and green onions.... i forgot to mention i also used diced swiss cheese and sharp chedda.  i didn't grab a pic of the corn off the cob... as it got a bit messy. 

seasoned the chicken with Montreal seasoning.... we love the stuff.  after it came off we had a few "samples" , the skin was amazing.... then i deboned it.



thigh meat deboned.  i season my thighs under the skin and then wrap the skin all around... so the inside meat gets really good flavor.



all diced up.... i wanted small pieces as i used mini penne pasta. 



here is the salad pre-chicken and pre-dressed.  grilled corn flavor is soooo good in this.



i wanted a simple cream based dressing.... miracle whip and sour cream.  My girls loved oil based dressing.  so i separated and made two.  the one with the miracle whip and sour cream is sooooo very good.  it really brings out the charred flavor of the corn and the smokey grilled chicken.  i love it.  this is the flavor i was going for.  the other one is very good as well.  i used olive oil, balsamic, and a balsamic dressing. it is very tasty as well.  but the flavors though they melded together.... the flavor of the salad dressing is more pronounced.  i prefer the true grilled flavors shining through.  it was a lot of chopping/dicing/prep... but.... I'm pretty satisfied with the outcome.  it was a nice change from the usual sunday meals.

Excellent recipes !!!!!

Love smoked chicken salads & smoked corn & black bean salsa is another crazy mix-up I tried & really liked, so this is right up this household's alley!!!

This was last night's dinner coming to post a little late. Grilled skirt steak, seasoned with Tatonka dust, with leeks, bell peppers, and a sweet potato.

18.5" OTG chugging along







I love skirt steak, and Tatonka dust is a pretty awesome seasoning.

The Menu

Smoked Bacon Wrapped Chicken Breasts
Grilled Artichoke Spinach Dip

Started off cleaning up the chicken breasts


Brined for two hours in cold water, salt and brown sugar.



Weber KC BBQ Rub



Bacon wrapped



Using the snaked method with some applewood



Midway through the cook



Last half hour gets some Weber BBQ sauce




Skewered and coated with olive oil, salt, and pepper



On the grill they go



spinach ready



Onions, shallots and garlic



Mixed with cream cheese, heavy cream, and parmesan cheese and this is after 30 mins back on the grill.

After all is side and done, the chicken was still nice and juicy. Just the right amount of smoke. I'd eat again.
Next time I'll do half the dip recipe. It was a lot for 4 people.
