Seems us meatheads every now & again run into a situation where
something from the vegetable kingdom may be a required part of the menu....
So I have a few of these items I've been doing for years that the veg-heads
& everybody else seems to like.....
Lemon Vanilla Basmati Rice
Per package directions:
~~2 cups rice
Wash & rinse the rice THOROUGHLY, until the wash
water is clear or almost clear
(very important with the white aromatic rices, basmati, jasmine, etc, to get the coating washed off,
or it will stick together when done)
~~3 cups water (or broth )
I used water as the other ingredients in this concoction go better than with broth
~~2Tbsp. oil or butter
I used lemon infused olive oil
( If cooking for vegetarians, I remember that butter's an animal product)
The above mix yields 8-10 servings ^^^^^^
This batch was 4x, so everything above was multiplied by FOUR......
Bring to a boil & STIR GOOD ONCE
Reduce heat & simmer, covered, 20-25 minutes.....
Then things veer off the track ~~~>
While rice is beginning to simmer, add an extra 1/2 cup water, 1/4 cup fresh lemon juice,
& 1/4 cup confectioner's vanilla
(Powdered vanilla used in cake frosting / decoration)
~~Stir just enough to melt powder, no more
Small dice 1 each yellow, red & orange bell pepper
Green don't go good with this, even if you like green....
When rice is done & cools a bit mix in peppers & 1/2 small bag of honey roasted sunflower nuts
(available in produce at most large groceries)
This 4x mix makes two half pans worth....
(fairly large batch for me, coulda used more peppers.....)
