Today i had a chance to break in my new 26" Kettle aka the Beast! Awhile back we made Creamy green chile chicken enchiladas, we decided that the chicken needed something so i looked up a Mexican marinade for chicken. I butterflied the chicken breasts and marinated it overnight and grilled it on the 26"

One batch received enchilada sauce on top prior to baking to add another flavor profile, both were a hit!
