Porcini Cheesy Fatty

Prepped and ready.

3 Brats, 1/2 ounce porcini mushrooms and a hefty dose of my sweet rib rub.


Mashed it all together last night and let the dried mushrooms soak up some porky goodness.

Flattened and filled with a few nice size chunks of Brie.

Ready to go

You get the picture, everything unwrapped, babybels on top and wrapped up tight.

Ready for a little rest in the fridge to firm up.

Wrapped and a little over 3.5lbs


Will be setting up the new browny with a snake and some applewood for a 3 hour smoke, will be back this afternoon with the finished product.

Are there 2 kinds of sausage? And did you use fresh or dried porcinis?

Either way that is a beautiful looking fatty!

@austin87 there is only one type of sausage (johnsonville brats) the inner core was mixed with the dried porcini mushrooms and some rub which gives it a darker color. There is also a nice smoke ring.

This turned out great, thanks for all the kind words, Next time a softer cheese on the outside, the Brie was perfect.
