Some cooks over the xmas break

I still have a few days for some more cooks, but I have enjoyed the time off for some cooks.
Chicken wings - used some bbq rub from savory spice (similar to Penzey's).

Trying out the new ir thermo from my secret Santa).

Nice day after xmas for grilling

Wings done

Whole red snapper, brussel sprouts, and steamed broccoli (in foiled pan)

The fish turned out quite good. I used alder as smoke wood.

Fired up the little WSM to cook a grade A, aged prime rib. This is the first time I have cooked meat that cost almost as much as the cooker. This was my first prime rib, and I wanted to to see what the fuss is all about.

All tied up and ready for seasoning


Montreal style run from savory spice - Hudson Bay.

All set up

Done after 2.5 hrs @ 310-330. Used oak and cherry (one chunk of each). Internal temp to 127.


I see what the fuss is about prime rib - this was really good.

what a meal!! , almost lunch time here....and it looks like pizza for me today :(
