Christmas Eve Porchetta on the 22''

Cooked up a packaged porchetta on the 22''. I've been passing these by for years and decided tonight was a good occasion to try something different since I'm in for more traditional meals for the rest of the week. I got my cooker last year for christmas and thought a bunch of pork fat was a fitting last cook of its first year.
Took a look when my internal reached 100 I couldn't resist.

It was pretty tasty. It made me want to make one from scratch. The meat had a brined texture from the packaged marination process which I'd try to avoid when making myself but it was packed with flavor. Almost like a corned beef.
