Same here, bought two full racks the other day. Might do them in a couple days. Undecided on my kettle or my WSM, as yet still unused. Either way, I've never done anything quite like this before.

Cooking these are simple! Some salt and pepper and spices to taste, smoke, for 5-6 hours at 250 or so, then use a toothpick through the meat until it goes through easily. For fotb I might do two hours unfoiled, 2 hours foiled, then unfoiled til done. I hesitate to run these past 6 hours unfoiled since one side is usually thinner than the other. It may dry that side out. Good luck!
