Tasty Butt on the Plum SS Performer

Sitting here dreaming of leftovers.  Next time I'll do a story line with more pics ... didn't expect it to turn out so good. 

Meat:
Butt pack at Costco.  I think it was about 2x 7lbs ... cooked one.

Rubs:
First layer was some homemade Sticky Fingers' Dry Rub (more or less: http://charlestonmag.com/charleston_magazine/recipe/sticky_fingers_dry_bbq_rub)

Second layer was some Bradley's Country Store pork rub.  No idea what's in it ... I've found that it's best when combined with something else.  http://www.bradleyscountrystore.com/

Cook:
Put it on around 1am. 
Mixed in some applewood with the coals.
Dialed in around 225 and played that game where I keep looking at the Maverick until I pass out.
Raised that sucker to almost 300 at 8am.  I wanted the meat off by 11am.

Results:
The pics just don't do it justice!  Everyone raved and had more and more.
Had a killer crust.  Good flavor.  Easy pull - melted under the fork.
I had it 3 ways (do it yourself - didn't want to skew the whole batch).  Plain ... Splashed with vinegar and mustard ... and with some Sweet Baby Ray's ...

That looks amazing. Funny, I was at Costco the other night and was eyeballing those two packs as well. This is on my short to-do list. Thanks for sharing.
