I was disappointed with the quality of the bacon. It was too thin and
Coming apart and difficult to work with. Tasted awesome tho!! The small bit of apple was just the perfect amount of crisp texture and added a nice hint of sweetness to counter the heat of jalapeƱo.

I forgot to take picture of the pizza I grilled on Wednesday. I used some left over salmon on it. Artichoke heart, sun dried tomato, garlic. 2 chunks of apple wood for smoke. Love me some grilled pizza!! Papa Murphy's FTW!

Thanks all. I'm learning a lot from everyone. I appriciate the sharing of knowledge and experience and welcoming community here.

My apologies for not replying to this sooner. This was the first plank cook I tried and it came out decent.  I cook for only my wife and I so I only use a pound of salmon

1 lb salmon. Skin on
Small pinch of kosher salt
Fresh ground pepper to taste
Fresh dill (I use a lot. A healthy 4 finger pinch)
Olive oil mayonnaise. A tablespoon dollop usually does it.

Salt, pepper, dill on fish. Then spread mayo on top and sides. Keep spreading because dill moves around a bit and try to not leave large globs. A lite coat covering all fish is fine. It's just to keep from drying out while cooking.

Wtf..?! Mayo you ask. It's basically spreadable oil that wont run off when cooked.

This I is only my second salmon attempt on the grill and the first time with a plank(maple). I had to put back on grill to cook up twice. I think total time was 25 minutes. In the oven I would have done this one for 12 minutes and checked by splitting in thickest section with a fork. The mayo will allow you a few minutes of forgiveness at the end
