Beef stew on the Summit

Beautiful Indiana day for smoking some beef short ribs.  Low and slow for 2.5 hours.  Into a Dutch oven with potatoes, carrots, onion, celery, and garlic.   Used some lipton onion soup mix and a little more than quart of beef broth to cover the vegetables.  Couple of Tbs corn starch to thicken.  Cooked for another 2.5 hours covered at 300.  Shredded the beef.  Kicked the heat to 350 and made some biscuits.  Comfort food at its best.  The summit is a pleasure to cook with.

Looks awesome! We did the same thing with our left over Rib Roast, made a great vegetable beef stew.
