St. Louis Style Pork Ribs on the Chief

Well, I was in the mood for some pork ribs today while I work on the house. I figured they would be on sale, but instead the beef ribs were and they looked good. I still went for the pork though because I have been cooking beef and chicken a lot lately. I rubbed these down with Dukes and set them in the 26'r over oak lump and red oak for smoke. I will update the pictures when they are almost done and then done so stay tuned.

Here's The Chief grinning from ear to ear.


These were my best pork ribs to date. I have never made better. great color, crust and smoke penetration. I know these aren't comp ribs,but they are the best I have ever eaten. I like them to pull apart. If I ever do a comp or help on one I will do these and just shorten the finish time. Before the wrap I added some honey and some cider vinegar. I also cut the bbq sauce with CV and it really took it to another level. 

I really didn't expect these to come out this good. I hope I can duplicate them. :)

The duke of ribs!! Those look fantastic, the chief did a perfect job! Lets hope mine come out this good tomorrow.

Who cares about comp ... If you like 'em, then that's all that matters, IMHO.  :)

That is one fine looking brownie, Duke! I'll prolly never see anything like that up here.  :-[

Those look just right to me....like 'em with some crisp on the outside like it appears you got goin' there.......not too saucy.............. ;D

Thanks, not one drop of sauce. I just put my sauce on the side, The sauce was excellent, but it didn't even need it.
