Grill-Fried Wings

Was reading over the interwebs and came across the Country Cooks recipe for grill-fried chicken. I needed a reason to try out the performer so I figured today would be a good day for wings.

Brined & breaded.


Totally forgot to get a grill pick but this is how they looked after they came off.


Tossed half in my own take on a buffalo wing sauce and the other half in my homemade Carolina Gold BBQ sauce.


I am amazed at how well they came out.
2 dozen cooked - me & the other .5 darn near finished them all off.
I’m liking this kettle.

Would it be possible to get either a link to what method you found or a personal rundown....brine, coating, cook setup, etc.?

This is one of a number of things I'm basically a dodo at cooking....been also looking thru Hoosier's thread on the WSM, which also contains some wing tips......

I watched that 7 min video and added my on minor tweaks.

- I brined with salt, sugar, garlic powder (no hot sauce) - and they sat in it for  3-4 hours.
- no cayenne in breading
- indirect charcoal grill instead of gas using 2 charcoal baskets to the outer edges of the kettle and cooking inbetween them
- couple small pieces of post oak
- around 450F for the cook
- at 40min I oiled them & they were done 20min after (IT 197-203F depending on the wing I checked)

Weekend weather is forecast to be in the crapper so I decided to try another “GRILL FRIED” cook.

This time.......lollipops.
Or at least the best I could do.
My first try.

Brined overnight and breaded.


Grill hot & ready.


All done & ready to eat.
2 plain - 2 buffalo - 2 gold bbq.


Ain’t the prettiest but they sure were tasty.
Grill fried is for real.

Brother, I find this hard to believe. C'mon man are you telling me you don't know how to get it hot and cook up some wings? Buckie, it's easier to believe that I've been with the corn cob chewin' gal in your picture than that you are looking for advice on wings.

And yes, that is some great looking chicken.
