Roti Pineapple Questions

what is the best way to roti pineapple on a 22”?


High heat indirect?


SnS?


How do I tell when it is done?  Is there a target temp?


Might try this, but skewered through the core rather than through the side.

Indirect high heat  (400-600F) with a drip pan. Never paid attention with internal temp but usually takes roughly 1 hour. Drill a 5/16" hole through the core so it will go through the spit easily.

This sealed me on getting a rotisserie, I was inspired by picanha and sealed by pineapple....

Unrelated and a personal problem but just the site of a Fireball bottle initiates my gag reflex. :)

Pineapple is also good with chicken .. glaze it with brown sugar and Capt. Morgan rum mixed with apple juice!
I did this one before I had my S’nS Plus .. now I use it for everything ! High heat works best for this cook.

Got to try out my new maroon SSP last night and what better then to try it out with the Fireball Pineapple recipe.
The pineapple was a hit at the dinner but for me not sure if I would have just liked the pineapple with the 50/50 white cane and brown sugar the cinnamon without the Fireball soak. Next time will do one with Fireball and one without for a good comparison. Hard alcohol and liquor recipes are hit and miss with me but at a party setting it’s a good conversation and presentation with the Fireball.

Mine didn’t turn out so good. You need a hot fire, and after roasting chestnuts, followed by a chicken, the coals were not super hot for the pineapple. Sugar did not really carmelize.

Next time will really crank them for some carmelization.

I enjoyed the smoked pineapple, the mrs not so much. I think it will be much better next time.

How much of this is cooking the pineapple vs just carmelizing the outside?  Next time I’m going for carmeluzing the outside and not cooking the inside much.

Try some Huli Huli pineapple. It's a Raichlenn (sp?) recipe, but involves milk, butter, cinnamon, brown sugar, and spiced rum. Amazing!
