So the wife and I went to the farmer's market last week and a local farm was selling pork. We picked out a nice pair of chops to be my first pork grilling experience. I made a marinade (Moore's, lemon juice, garlic, rosemary, and EVOO), and let them marinate for a few hours. Tossed them on my kettle over indirect heat until about 125°, then moved over the coals to reverse sear till 140°. I wasn't expecting the big pork fat flare up, so they charred a bit more than expected. I was afraid they'd be no good. Took them inside to rest, and when we cut, the inside was PERFECT! I'm not normally a big pork fan, but I liked these. As for the asparagus, I just wrapped fresh Spears in bacon, sprinkled with SPOG, and cooked indirect. What do you guys think?
