Vacation Grilling

We taking a trip for New Years with some friends and I get to bring Big Tasty (my wife's name for the 26" kettle). I'm starting this thread to encourage/remind myself to take photos of the grill time I get to enjoy while on vacation.

There are 5 couples, 4 babies (all under 18 months). The planned meals include:
  • Fri dinner-burgers and ABTs
  • Sat dinner-chicken fajitas
  • Sun dinner-ribs (with drip beans) and wings

I'm confident Big Tasty will be large enough for burger and fajita night. For ribs and wings we'll have 3 racks of ribs and 10 lbs of wings. My plan is to start ribs around 10:30-11, cook nekkid till 5:30, rest/finish in oven (depending how close we are), then do wings around perimeter. Supposedly there's a gas grill at the house we're renting so that could be a holding option too.

Twice a year, we go to The Cottages on Indian River Inlet, just south of Rehoboth Beach, DE. My 18.5" kettle always makes the trip with us.



Have a grate thyme, sounds like a blast!

Yeah, hopefully it's not too crazy. Ours is 18 months, a couple are 6-8 months, and the youngest 2 months.

Loaded up and ready to hit the road:


Unfortunately I didn't get pics on Friday due to longer than expected travels, grocery shopping, settling in etc. Initially I was going to do poppers to go with burgers but ran outta time, instead I did a popper burgers. I built the burger with roasted jalapenos, bacon, cream cheese, cheddar cheese, and grilled onions.

Saturday we did fajitas:





Sunday was more robust; ribs, wings, drip beans, etc:

Well I wanted do mojo but forgot to get some so I improvised with what we had. I did combo of olive oil, orange juice, lime zest, kosher salt, black pepper, garlic powder, chili powder, cumin, dried oregano and cilantro.
After getting it on the grill I hit it with a light mix of kosher salt, black pepper, garlic powder, chili powder, cumin. I think it turned out better than the mojo would have.

Sounds great. Good job with the on the spot improvisation.

@jdefran Looks like it turned out just fine!! Even with all those little ones running around. Probably a smart move. "Ladies, I'll be manning the grill." You had that 26 workin. Great pics, great job!
