Hey all,

Paleo bacon is ridiculously expensive.  So I'm making my own.  This is my second time doing it and it's great.  Here's the recipe I use:

Only differences are that I bag the bellies in gallon ziplock bags and I smoke it with applewood on the ranch kettle.  If you have the time and patience, it's a blast to do on the kettle...

Man that looks good! I went to two different meat markets this morning, but couldn't find any pork belly. I'll try again this afternoon.
Looking for colored 18's and SJ's.
