New Year's Eve cook

Got two pork shoulders on.  7 hours in and still only at 172. Hoping it breaks the stall soon.

Never wrapped so I wouldn't know but that bark looks sooooooo good. Personally I'd let it ride unless you are really pressed for time.

@kettlebb is right about the bark. Looks delicious, and it will lose some of the "crunch" factor since you're basically steaming them to get done in time. You will still have the bark and flavor there and if you do wrap, save those juices at the end and pour back in.

Pork taken off the smoker.  Final product pulled. Bark was awesome. Flavor and moisture in the pork was great
