Spatchcocked turkey on the ivory

15 pound turkey dry brined with 3 tablespoons kosher salt, Italian seasonings and pepper. Simple two zone fire with baked beans in the basement. Spatchcocked for a quicker and more even cook. Couple of good sized chunks of cherry thrown on for a bit of smoke. This was my first cook on the ivory and man did I enjoy it.

Cooking on the ivory. Haven't had the guts to do it myself yet. Looks beautiful.

I have one with Brian handles. Couple years now. Can not bring myself to get it dirty.
Want to keep it in the house, she won't let me. Nice cook, Weldboy.
