Smoked brisket
« on: July 31, 2016, 08:08:49 AM »
Trying a smoked brisket on the WKG and having a hard time regulating the temperature, ot keeps getting too hot. So far it's looking good, not sure how it will turn out being cooked at a higher temperature.

It was running 300 to 310. I tried opening and closing the vents, I was able to manage it down to 260

How many lit coals did you start with and at what temp did you start closing vents?
I find that if I start with too many lit coals and don't start closing vents at around 225 then it can get away from me and then it's a little more difficult if I overshoot on the high end.
