Reverse sear steak

 The end to a three day weekend. and I ended it with my favorite way to cook a steak. if you never tried a reverse sear you are missing out. This is by far my favorite way to cook steak. Cooked even every time. And gives the steak time to soak up some of that great hickory flavor.[emoji621]

I scrolled past this real quickly the 1st time & thought: "Wow, that's a huge steak he's got there on that Ranch kettle"


Looks tremendous, just slightly smaller than I thought !!!!

I've gotta try the reverse sear, what temp do you want to keep at during the smoking?

Didn't have a thermometer on my jumbo Joe. Cooked it indirect for about 30 minutes then seared it over my basket. Both my vents were wide open. I used lump charcoal and a few small hickory chunks. Its not a low and slow cook. Found this method watching YouTube.

Do you flip it at all during that 30 minutes or just leave it?  Beautiful steak!!

Reverse searing is one of the best things I've learned having the grill. Its ruined my wife and I for going out for steaks, but oh so worth it.

I have the temp at around 325 during the smoking portion of the cook and don't flip at all. Then I take the lid off as the meat is reaching about 110 and stoke the coals to get it hot then sear for about 20-30 seconds per side.
This is a fairly cheap hobby when you consider the time  with family and friends and how many meals are created.
