Stuffed pork tenderloin

Trying something new here. I'm leveraging the $1.99/lb whole pork loin at our grocery. I decided to butterfly it and fill it with something good. For something good, I went with wild rice, mushrooms and some breadcrumbs. I seasoned the stuffing and used a wet rub with some rosemary, fresh garlic, black pepper, cumin and peanut oil.





I cooked this on the 26" kettle so I wouldn't have to cut it in half. ;) I also threw on a couple foil wrapped spuds.





First cook of the new year!

Cindy rounded out the menu with a salad made from red cabbage, onions and some dried cherries.

Hank that looks great.  Gives me some ideas to try with my next pork loin.  Not sure what I will stuff it with just yet but I will be doing one in a week or two so going to think about it for a little. 

If it tastes anything like the picture then its pure goodness. ;D
