The flat side works for smash burgers and veggies. I use the grill side for steaks and chops. I only have 2 small sections that I lay on my 22 grate. I don’t use it often enough. It’s a nice accessory.

Never tried the flat side, but I love using the rails for steaks, burgers, chops and boneless chicken breast filets. They can be a pain to clean but they’re worth the extra effort.
