Rib Tips ?

I was just at sam's club and picked up some rib tips .94 a pound. I was thinking I could use them for practice for baby backs. Can I use the 3-2-1 method?  Do I cook the whole piece's or separate into smaller piece's? What internal temp are they supposed to be before wrapping? Thanks for the help.

I’d cook them whole. I’d probably cook around 275-325 for 3 hours and no wrap. Give an occasional spritz. Cook to 195 internal. Then I cut them up cross wise right threw the cartilage about 1” wide pieces. Just eat the good bites on the outside. That’s what I do anyway.

I prefer this as well 275 3 hours --- no sauce, just dry rub...2 hour mark rotate them only no spritz...people like em...not fall off the bone..a little tug off the bone...good stuff
