Beef Short Ribs - New Year's Eve

Picked up some Beef Short Ribs at Rouse's for New Year's Eve cook.  Copper top got the call.

Nice ribs



Not the best price but oh well....



Tried some Arthur Bryant's rub I picked up at Academy



Copper top settling in around 275 and just a smoking....



Trying some beans in the basement for the first time



Ribs on!



Only the second time I have used a snake.  Works great!



Ribs at 190 and Thermapen goes in like budda



Ribs look tasty!



Platted with basement beans.  Loving the smoke ring!



The ribs were rich and delicious.  The beans were very good with a deep smoky flavor.  Enjoy!!

Those look really good. I still haven't tried the snake yet. How long were they on and how much fuel did you have left?

The snake went a little more than half way around the kettle.  I am still trying to figure out the time length.  I had less than a quarter of the snake left when I took the ribs off which was around three hours or so. So, I figure I could have gone at least 4 1/2 hours with the snake I made.
