The meatloaf is super easy and very good. I use two pounds ground beef, one egg, one sleeve of crushed saltines or bread crumbs, and a jar of chunky salsa. Mix it all up and grill, indirect, for about one hour.
The potatoes are pretty easy, too. Grease up your skillet with butter, layer sliced potatoes, onion, cheese, salt and pepper. I sometimes add crumbled bacon. The potatoes need to be sliced about 1/8 inch thick. Cover the last layer with cheese. Pour about one cup of milk or half and half over the top. Cover skillet with aluminum foil and grill indirect for one hour, turning skillet 180 degrees after 30 minutes. After one hour, remove the foil and add more cheese if you like. Cook for 30 minutes longer or until the cheese on the top starts to brown.
For the cobbler, one half stick of butter, one cup self rising flour, one cup of milk, one can of fruit pie filling. Melt the butter in the pan, mix milk and flour and pour over the butter. Do not stir or mix. Spoon the pie filling over the batter. Do not stir or mix. Indirect heat for about 30-45 minutes.
All three are super simple and easy and they turn out great.
