Crispy Fried Chicken

The following link has a recipe that was easy and straightforward.

It has the line: 
LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL! 

I followed this advice, and I believe that it is necessary to achieve the desired results.

Recently, I acquired a used 17" Lodge skillet.  The thing is huge …






I dumped a full chimney of RO briquets into the polar-vortex basket.
Then poured the entire contents of a 3 Litre bottle of oil into the pan.








It took about 30 minutes for the oil to reach the desired temperature.  In went the pieces … Plenty of room.  :D






Occasionally I would turn the pieces, especially the two breast pieces as they were not fully submerged.
The pieces were removed after about 35 minutes.




The pieces turned out crispy …. very, very crispy !!  Almost to point of being loud.  I was pleased with that.

I did not use too much seasoning in the flour.  Next time I will use more to hopefully add some extra flavour.

I could see myself doing some crispy fried chicken, salmon, and thick cuts of fries all together.  Thanks for the idea.

Someone posted on here fried chicken cooked with the vortex, same principle just no oil. Flour and season your chicken and place around the vortex and cook until done fried chicken without oil.

Wow!  One of these days you'll have to show me how to do that. So far, all my attempts at fried chicken have been mediocre.

Does the 17 inch cast iron skillet clear the slot on your Kettle Pizza?  If it does, you could use it for so,e beautiful deep dish pizzas.

That was one of my questions when I first saw the ad, and then ultimately acquired it …. I will let you know.

Even if it does not, I want to try a deep dish pie with it à la BBQ Pit Boys without using the KP.

Already used it again for CFC … 16 drumsticks fit no problem.  :D  Keep the mess outside.  8)

I just realized I left a tape measure in the back vestibule which is where my Kettle Pizza is stored so I thought there's a straightforward way to answer that question, right?  Not quite. By my quick measurement, the KP slot is 17 inches at its widest. So, depending on where Lodge measures their 17 inches for the skillet, it might or might not fit through the slot.   If it does, it'll be just barely...I guess you'll have to try it and see.
