National Wing Day
« on: July 30, 2016, 03:53:09 AM »

One batch with my typical Korean flavors. Another breaded then tossed in butter and old bay.  (Locally known as old bay and butter or "chesapeake wings ")

I think the breaded wings were the winner. Love it or hate it, the vortex gave me super crispy wings.   Yum!

Oh yeah...

Man, I've got to try this vortex technique - amazing!

Love me some grilled wings. Think a monte cristo is best left to a fryer though.
Still need a 22” yellow

Judgement:

I found a Chesapeake Bay Wings recipe from Serious Eats via the Google and followed that pretty closely.

Spice was very good, but maybe a bit too much. I used about 3 TBSP Old Bay for 2 pounds of wings. I will try a bit less next time. Finished with 2TBSP melted butter, 1 TBSP Worcestershire sauce, and a  few dashes of Tabasco. Little more Tabasco next time. Would also like the wings a little more crispy.

But overall, two thumbs up - good recipe.

@haeffb good job on the cook!  I cook wings indirect the whole time with or without the vortex.  Indirect high heat cooking gets them crispy without flareups or charring.  Looks like you did a great job!  For my Chesapeake wings, it's literally a toss in some butter then a toss in a very small amount of old bay.  Super simple.

@haeffb I just used flour and a little salt and pepper.  I dipped in milk first.
