Found this in the bottom of the freezer. 129x10 in the Sous vide. Patted dry, seasoned with Tatonka Dust and seared over the vortex

A buddy of mine is going to give me one from his freezer. I've never even seen a deer back strap. Is it something I could butterfly and stuff?

If you're real good with a knife, maybe. They are pretty small in diameter , mine was folded in half.
