Smoked Smashed Burgers

Cooking for myself boys. So it was burger balls smoked with a Scotch barrel chunk.

Used my Green 18 OTG:



Smoked the beef for about 25 minutes at a temp of about 150f: It was a little low but I didn't have them on that long.

I then moved inside to the preheated Woll fry pan....a damn wonderful thing...no cooking oil used:





Smashed real good:



No extra lean or lean here.....that's medium beef....I like the fat:



Finished with carmelized onions, mustard, arugula and a little mayo:



I gotta give some credit to @Scott Zee for inspiring me to do this.

I smoked 3 balls so I still have an extra ball for the future.

Love the greeny...and the burger of course.

I have become a big fan of arugula in the last couple years. The sweet peppery notes make it far superior to any other green I have tasted. My Dad used to plant some every week or so in the Summer to ensure a constant supply. He liked to harvest it while young and tender.

It looks like you have some baby spinach and arugula going on there @MrHoss!  In my 2 seperate requests recently for people to bring over some arugla to put on pizzas I have ended up with two baby spinach and arugula tubs.  Haven't been to the store to see if it hard to find just arugula by itself, but baby spinch goes just fine with arugula.  I agree with you that peppery taste of arugula is great on burgers....and pizzas!   You're burgers look awesome.  I need to start finishing my burgers on a griddle, skillet, or pan!  Nothing like that nice crispy crust on a burger!

Package said Arugula but some of those tops did look like spinach to me too. Can't trust the label.
