Hell Fire Grill

Larry it's another pan pizza in a 17" CI Lodge skillet, but it's on the 26 this time. I made the crust & sauced it, a healthy layer of mozzarella, half a pound of bacon, a pound of Hot Italian sausage, more mozzarella, then jalapeƱos on top. I used a ring of fire with a couple handfuls of lit lump in the center.

Boiled brats in beer and onions, then browned on the gasser.  Served in a toasted bun, topped with sauerkraut, stone ground mustard and those onions, and potato chips on the side.

Thanks.  I have always just grilled them directly on the gasser, until recently when I stumbled on a different way of preparing them.  I like beer and I like onions, so I thought, why not?!  Using the old way, the brats would always just split open and all of the moisture would just spew out, resulting in a ton of smoke.  Using this technique by boiling them first and then just browning them, the cases don't split (as much), and most of the moisture is retained.  The end result is more moisture and more flavor.  While it may be more time consuming, I think the end result is definitely worth it.

Until recently were you poking any holes in the brat casings before you grilled them?  That has almost always kept them from splitting for me.
